I wanted a quick recipe for this as I'd already made the plain ciabatta with a poolish from night before.
So this mix is from the video below that doesn't use a poolish:
And this video that uses olives. I actually used the stand mixer first:
So I left salt till last. A slightly different recipe because it has strong and plain flour and olive oil.
Ingredients in order:
325 g water
1/2 teaspoon dry yeast
42 g olive oil (virgin evo)
297 g strong flour
127g all purpose flour
1 1/2 teaspoon of salt
Olives chopped up
In stand mixer.
The original is no knead but 4 folds at 1/2 hour interval. I will mix and do 2-3 45 min folds and last rise as normal.
