Beef Stroganoff

I bought some mushrooms and wanted something to do with them. So, Beef Stroganoff!
Beef is expensive at the moment, so I bought a Beef Roast and now I have an instant pot I can steam the meal. The steaming will soften the meat. 

I sliced the meat into thin strips and then used the saute setting on the instant pot. I saute'd the meat in a bit of olive oil adding about 3 cloves to the meat, then onion in butter  (1 1/2 small onions), and then saute'd some mushrooms in butter. I saute'd them seperately.
I then added the meat and onion into the instant pot and put them on steam for 10 minutes, I only had some pork stock, so I used that instead of beef stock.
Then, into the instant pot the beef, the liquid from the beef sauteing, and the onion. That is put on steam setting for 10 minutes to cook the meat wioth the stock and onion.
After the steaming I took it outside to do a quick steam release (so no vapour in the house).
After steam release I put it back on saute and added the mushrooms and a glass of red wine (steaming evapourates the wine so I do that later) also the mushroom flavour is delicate so I didn't want to steam them either.

There was quite a lot of fluid in the instant pot with the meat, so I used a ladle to get most of it out before adding the sour cream. I did not want a soupy mixture to put on pasta/rice/mashed potato so that the topping is pretty dry.
i cooked the pasta seperately, there are video's that put the pasta in the instant pot and the sour cream later, but I wanted to have the main stroganoff as a seperate sauce/meal that I could add to either rice, mashed potato or pasta, especially for other meals.

End comment

A few beers more than I intended before it was cooked, but a lovely meal. I do like beef stroganoff.
Quite flavourful. Cooking the meat and onions forst and sauteing it works well. The adding of mushrooms, wine and sour cream after the pressure cooking weorks too, as well as adding a bit of salt/pepper at the end.
